Frühstück

Wie beginnt der Tag in Andalusien? Natürlich mit einem typisch andalusischen Frühstück. Wie sieht ein typisch andalusisches Frühstück aus? Das kann man nicht genau eingrenzen. Denn die Essgewohnheiten in den 8 Provinzen der südspanischen Comunidad Andalucía sind verschieden. Hier noch einmal zur Auffrischung die Namen der 8 Provinzen Andalusiens:

• Pitufo oder Bocadillo (grosses Brötchen) „Catalana“: mit Olivenöl, Tomatenpüree und Serrano Schinken. Ein Catalana kann anstatt mit Schinken aber auch mit Manchego Käse belegt sein. Dann heisst es „Catalana de Queso“.
• Pitufo oder Bocadillo nur mit Olivenöl und Tomatenpüree und etwas Salz
• Pitufo oder Bocadillo mit Olivenöl und Käse, vorzugsweise Manchego Käse
• Pitufo oder Bocadillo mit Paté: mit Leberwurst
• Pitufo oder Bocadillo con Mermelada: mit Marmelade
• Pitufo oder Bocadillo con Miel: mit Honig
• Pitufo oder Bocadillo „Mixto“: Mit Käsescheibe und Kochschinken – als Brotaufstrich wird entweder Butter oder Olivenöl verwendet
• Pitufo oder Bocadillo: mit Thunfisch
• Pitufo oder Bocadillo con Sobrasada: typisch andalusische Streichwurst

Der Milchkaffee Café con Leche

Der Milchkaffee spielt in Málaga eine ganz besondere Rolle. Denn hier gibt es gleich 9 verschiedene Arten, den Kaffee zu geniessen. Die bekannteste Variante ist der „Café con Leche“ (halb Kaffee / halb Milch). Trotz recht hohem Milchanteil ist der Café con Leche aufgrund seiner Herstellungsform immer noch stärker als eine Tasse deutscher Bohnenkaffee ohne Milch. Denn der Café in den Bars und Restaurants in Málaga und Andalusien wird durch Expressomaschinen gewonnen. Manche Andalusier haben eigene elektrische Espressomaschinen zuhause. Andere besitzen ganz ähnliche Kaffeemaschinen, wie sie auch in Deutschland üblich sind (Filterkaffeemaschinen). Was jedoch in keiner andalusischen Küche fehlt, ist eine spanische Espressokanne.

Churros

Churros gehören zur Andalusischen Küche wie Pfannkuchen zur Deutschen. Churros sind eine typische Frühstücksspezialität, werden aber auch gerne zum Nachmittagskaffee verzehrt. Churros bestehen aus Mehl, Wasser und Salz und werden in sogenannten Churrerías oder Bars frisch zubereitet. Die Masse der Churros wird in heissem Öl in Kringel-Form ausgebacken und anschliessend vom Churrero mit einer Schere in mundgerechte Stücken portioniert. Die Churros werden dann entweder direkt mit Kaffee verzehrt, mit Zucker bestreut oder in heisse Schokolade getaucht, die auf Wunsch zu den Churros serviert wird.
